Two things follow. First, Wednesday and Thursday requests straddle the desk's weekend, which is why a Thursday evening request is the one most likely to sit untouched for days. Second, the Gulf week and the desk's week only half overlap. The weekend is Friday and Saturday in Qatar, Kuwait, Bahrain and Oman, so Friday is a rest day for you and a working day for the desk, while Sunday is the reverse. In the UAE the weekend is Saturday and Sunday, the same as the desk's.
If timing matters, request between Sunday and Tuesday, and use an e-wallet so that the 0 to 24 hours after approval does not become 3 to 5 bank days.

What the caps do to a big win
The daily cap is the constraint most players only discover after a good week. At level 1, a €5,000 balance takes ten separate days of €500 withdrawals.
